Our menu offers contemporary dining, inspired by the season and locality, echoing Wales and its produce. Carefully sourced from predominantly Pembrokeshire and Welsh suppliers, the raw ingredients are fresh and originate from the surrounding countryside and coast.
Lobster, crab, mussels, clams and many species of fish are caught daily in the surrounding seas; whilst beef, duck and fowl are farmed locally. Wales is famous for its lamb and it regularly features, whilst foraging rewards the chefs with ingredients such as samphire and monk’s beard.
From the windmill, you can see lush green fields above Caerfai Bay, dotted with a herd of grazing dairy cows. It is their milk that the local farmer churns into Cheddar and Caerphilly organic cheese, and is a must to taste.
